Jorma`s Chinese food

According to many, this is the best Chinese food they have eaten, many being three in this special case. The marinade and the Hoisin sauce recipes are stolen from the book Nergard-Gyllenram, the best of Wok foods, the idea of adding so many good parts to the recipe that making this food takes some time, is of course, my invention. It is a plenty for three people, probably you would say that the recipe is enough for 6, but three will eat if given the time.

Check that you have a Wok and olive oil. If not, skip this recipe.

To start with, make a marinade for the meat:

– 3 food spoons of Chinese soya sauce,

– 2 food spoons of  brown sugar diluted in hot water to make syrup, or nowadays I make it with xylitol to avoid tooth problems,

– 3 garlic cloves, pressed

– 3 teaspoons of lemon juice (=one lemon)

– 1 teaspoon of hot chili pepper sauce.

Take 700 g of turkey breast, or leg files. Cut the meat into small slices, about 1 cm thick (like 1x1x10 cm slices). Marinate these in the marinade in the refrigerator for at least one hour. Meanwhile you can chop the vegetables.

Chop 2 big carrots into very thin sticks. So find two huge Continental European mutant carrots and cut them to sticks that are about 0.5 x 0.5 x 10 cm, this is what takes time in this recipe. Put all the ingredients to different containers, as they may require different time on Wok. Then chop 3 paprikas (=bell peppers) into slices, it looks nice to have a red, yellow and green paprika. Chop 2 stems of leek (the white parts, of course wash all the vegetables first) into 1 cm slices. You can cut the green parts, but the rings look nicer and they are tasty. Slice some 3-4 onions to 8 parts the way an orange splits. Chop 4 garlic cloves to small pieces and chop the same amount of fresh ginger into very small parts.

There is still probably some time. So, put 90 g of dried Chinese mushrooms to hot water. They do not need to be cooked, they only stay in water for some time. Follow the instructions in the package.

Cook Chinese (or actually I think they are Thai) rice noodles, one package. It means that the water is boiling and you put the noodles in and cook for the time they say in the package.

This is a nice moment to make the Hoisin sauce. You can buy Hoisin sauce, but this is better. It is from the Wok book. Mix

– 3 dl roasted peanuts crusher in a mortar,

– 12 food spoons of Chinese soya sauce,

– 3 food spoons of honey

– 3 food spoons of vinegar,

– 6 teaspoons of olive oil

– 1 teaspoon of hot chilly pepper sauce

Find a big pot with a lid, like some 20 liter or something, in anyway large. If you do not have one, use many small ones. We will simply make each part of the food and dump them into the container one after the other and mix there.

Wok the meat in three portions with olive oil. It takes about 8 minutes to wok think turkey slices. Put to the pot.

Wok the garlic, onion and 2 dl of roasted peanuts. You may need to add oil a bit. The time does not matter much, these can be eaten raw, a short time, 2 minutes or so. Put to the pot. Remember the roasted peanuts, they really make the taste. Add more of them if you like.

Wok the carrots and paprika under lid for some minutes. They should not get completely soft, but not be totally raw. To the pot.

Wok the leek for a short time. I add some salad, but it is not so important. The salad shrinks anyway. Add to the pot.

Wok the mushrooms with olive oil for 2 min. Then wok the noodles. With the noodles add soya sauce and some of the Hoisin sauce. With two wooden spatulas break the noodles (they stick together in cooking) into smaller parts, fry and add soya sauce. Put to the pot.

If you want, you may open a can with Chinese bamboo, fry them in the Wok and add to the pot.

That`s about it. Mix the stuff in the pot, take some of it to the wok, warm and serve with the Hoisin sauce. The food is good also when cold. What takes time here is chopping everything and that everything is fried separately in the wok, but it is worth it. It is better than Peking duck, I mean my Peking duck.

Don’t you ever eat junk food ?

Sometimes pizzas, hamburgers, yes. But at some time my wife wanted me to make some food, so for a while I read all our old cook books and tried many new dishes. Now I mostly only make cock-au-vin, reindeer stew out of turkey, Finnish meat soup, rice porridge, couscous and fish on pan as they were the favorites, easy recipes. Forgot this cooking interest for a while.
